Hawaiian Kanpachi

Ocean raised fish. Distinctly fresh, sashimi-grade white fish, raised sustainably in the waters off Hawaii. The clear blue waters of Hawaii is the only place in the world where Kanpachi are grown in the ocean. Expect a fat content that is higher than hamachi and a silky texute with the look of candy glass. We find its very rich and deep olive oil taste to be the best part. Freish, never frozen, skinned, pinboned, ready to slice!
Hawaiian Ahi (Bigeye Tuna) Ultra is the very best grade of fresh Ahi available in the world. The meat is translucent and brilliant red. A very low water content and high creamy oil content give Ahi Ultra its superb taste. Due to its outstanding quality, sashimi preparation is recommended. The shelf life on this Ahi is longer and the color will maintain vibrant. Fresh, never frozen, skinned, ready to slice!

Hawaiian Ahi Select

Hawaiian Ahi (Bigeye Tuna) has a rich taste and firm texture. This grade of Ahi is a perfect selection for grilling and searing due to its deep oil content. Very often this selection of Ahi is also used raw for Poke or sushi and fresh sliced sashimi.
‘Ono’ is a Hawaiian word meaning “delicious”. Only found in Hawaiian waters, Ono cooks up snow white and has a tuna like texture. Served raw, Ono has a smooth velvety feel and a sweet, buttery taste. Fantastic for raw applications, great for grilling or searing. It’s beautiful and clean, jewel like appearance is known to convert many non- fish eaters.

Hawaii Natural Wild Caught Swordfish-Premium Chef Cut

Hawaiian swordfish are caught on long line fishing gear in the colder currents of Hawaiian waters. The trips are very short ensuring that the freshness is superior to other versions found on the market. When sword has a clean, slight pink hue and buttery moisture like this, you can refer to it as ‘Shutome’, which is the Japanese name for sashimi grade sword.
