This wine was crafted from Pinot Noir (80%), Chardonnay (10%) and Pinot Meunier (10%) using the traditional methode champenoise, which does not factor vintage. This beautiful salmon-colored wine opens with inviting aromas of strawberry and rose. Flavors of freshly-picked strawberry, red raspberry and brioche dance upon the palate, with a pleasingly full finish.

Content | This wine was crafted from Pinot Noir (80%), Chardonnay (10%) and Pinot Meunier (10%) using the traditional methode champenoise, which does not factor vintage. This beautiful salmon-colored wine opens with inviting aromas of strawberry and rose. Flavors of freshly-picked strawberry, red raspberry and brioche dance upon the palate, with a pleasingly full finish. | 50% Marquette, 17% Brianna and 33% Wild Apples. The grapes were hand picked from the Mad Meadows Vineyard between September and October 2019 and the wild apples were harvested between October and November from Canamack Farm. Both grapes varieties were fermented and foot crushed whole cluster separately. After the wild apples were milled, the pulp underwent a week long maceration. The Marquette & Brianna co-fermented and aged in demijohn. In the late spring/early summer of 2020 we blended the Marquette, Brianna, and Wild apples and organic maple syrup was added to the still base wine of the Marquette, Brianna, and Wild apples to start a second alcoholic fermentation. The wine was bottled to finish under cap as a traditional method sparkling wine. Native yeast fermentation. No sulfur additions, fining, filtering, or funny business in the winery, just fucking fermented juice. With a fruity nose, blending notes of citrus and small red fruits, the bubbles are soft and pleasant. The nose boasts aromas of white fruit, star jasmine and mango. Long on the palate, its reminiscent of caramelized butter and almond with a hint of cardamom and citrus zest. The wine was 100% barrel fermented in a mix of Francois Frere and Baron oak barrels 38% new for 8 months before bottling. The wine went through 100% malolactic fermentation with a mix of native and inoculated ferments. | ||
