Description

52% Marquette & 48% La Crescent. The fruit was handpicked from the Ellison Estate Vineyard in October 2019. Both varietals underwent whole-cluster semi-carbonic fermentation before being foot crushed. They were both fermented and aged in demijohn. In the late winter/early spring of 2020 the varietals were blended and organic maple syrup was added to the still base wine of the blended Marquette and La Crescent to start a second alcoholic fermentation. The wine was bottled to finish under cap as a traditional method sparkling wine. Native yeast fermentation. No sulfur additions, fining, filtering, or funny business in the winery, just fucking fermented juice.

The pink color of our LVE Rosé French Sparkling is reminiscent of a vineyard peach. With a fruity nose, blending notes of citrus and small red fruits, the bubbles are soft and pleasant. Its well-balanced with voluptuousness and hints of red currents and pomelos, complemented by a nice acidity on the finish. Please Note: Shipping to CT, GA, IL, IN, IA, KY, LA, ME, MI, MO, MS, MT, OH, PA, RI, SD, UT, VA, WV is not permitted due to state laws. Our Rosé Provence 2018 is a brilliant, pale pink color, exuding fruitiness and elegance. The grapes from sandstone soils bring out the fruitiness and the grapes grown on vineyards with rounded pebbles bring a richness and elegance to the wine. On the palate, crisp light notes of fresh picked strawberry and white nectarine lead to an elegant, lengthy and a mineral finish. Appellation: Côtes de Provence Varietal: 49% Grenache, 37% Syrah, 14% Cinsault Alcohol: 12.5% by vol. 50% Marquette, 17% Brianna and 33% Wild Apples. The grapes were hand picked from the Mad Meadows Vineyard between September and October 2019 and the wild apples were harvested between October and November from Canamack Farm. Both grapes varieties  were fermented and foot crushed whole cluster separately. After the wild apples were milled, the pulp underwent a week long maceration. The Marquette & Brianna co-fermented and aged in demijohn. In the late spring/early summer of 2020 we blended the Marquette, Brianna, and Wild apples and organic maple syrup was added to the still base wine of the Marquette, Brianna, and Wild apples to start a second alcoholic fermentation. The wine was bottled to finish under cap as a traditional method sparkling wine. Native yeast fermentation. No sulfur additions, fining, filtering, or funny business in the winery, just fucking fermented juice.
