The Dundee Cake, also known in the Caribbean as a “light fruit cake” is not at all like fruitcake, but has the texture of a pound cake with a small portion of our signature fruit, found in our black cake. Serve with your afternoon tea or even as a breakfast treat instead of a muffin.
